LA DISTILLERIE DE LA METAIRIE
From studies to project management
Martin and Olivier Bouygues bought the Métairie distillery in the Charente region in October 2017, comprising 21 hectares of vines in Petite-Champagne and 7 boilers, with the aim of producing their own Cognac eau-de-vie. On this site, they plan to extend the distillery to accommodate 10 stills in the long term and to demolish the outbuildings in order to build a vinification vat room, distillation cellars, ageing cellars for the eaux-de-vie and technical premises (the Romeo Architecture Agency is the project designer). The work will be carried out in two phases to respect the production campaigns (harvest and distillation) and to follow the evolution of the growth. In 2020, Cap Ingelec carried out an audit and a feasibility study of the process and utilities lots in order to consolidate the project technically and financially. Since the beginning of 2021, Cap Ingelec has been designing and piloting the realisation of the entire process. The project will be delivered at the end of 2022 with the vinification vat room, the distillery, the distillation cellars and the ageing cellars.
